Ingredients: 250g Diced Chicken Breast 1 Medium Onion Sliced Finely 25g Dried Apricots (50g if not using pineapple) Chopped 2 Pineapple Rings Chopped 1tbsp Runny Honey 2 tsp Morrocan Spice Mix 1-2 Garlic Clove or 1 tsp easy garlic 1 inch grated Ginger Root or 1 tsp easy ginger 400g Tin Chopped Tomatoes 100ml Stock Salt & Pepper to Taste Optional Worcester Sauce Fresh Coriander If you can get hold of a pre mixed Moroccan Spice Mix, it will be much easier for you! If not use the following spices, using more or less quantities to taste: 1/4 tsp Paprika 1/4 tsp cinnamon 1/2 tsp turmeric 1/2 tsp ground cumin 1/2 tsp ground coriander Pinch of Saffron Enjoy! xoxo
